Caramel Popcorn and Nuts

Ingredients:

  • 16 cups popped corn (about 3/4 cup popcorn)*
  • 1 1/2 cups pecans
  • 1 1/2 cups walnuts
  • 1 cup packed brown sugar
  • 1/2 cup butter or parve margarine (1 stick)
  • 1/2 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 250 degrees. Place popped corn, pecans, and walnuts in
    large open roasting pan (17 1/2 inches by 11 1/2 inches); set aside.
  2. Prepare caramel coating: In heavy 2-quart saucepan over medium
    heat, heat brown sugar, butter or margarine, corn syrup, and salt to
    boiling; boil 5 minutes, stirring frequently.  Remove saucepan from
    heat; stir in vanilla extract.
  3. Pour hot sugar mixture over popped-corn mixture, stirring to coat well. Bake popped-corn mixture 1 hour, stirring occasionally.
  4. Remove from oven. Spoon caramel-covered popcorn mixture into another
    large roasting pan or onto waxed paper to cool, stirring occasionally
    to separate.
  5. Store popcorn mixture in tightly covered containers and use within 1 week.

Yield:  Makes about 21 cups.

 
Original Party Mix
: Cereal, Nuts & Pretzels With A Spicy Sauce!

An old-time favorite that is easy to prepare, recipe can be doubled and can even be frozen!  How can you beat that?

Ingredients:

  • 3 tablespoons parve margarine
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon onion salt
  •  2 teaspoons lemon juice
  • 4 teaspoons Worcestershire sauce
  • 7 cups Crispix cereal (mixture of corn, rice, wheat)
  • 1 cup salted mixed nuts
  • 1 cup thin pretzels

Directions:

  1. In oven, melt butter in 13 x 9 x 2-inch pan.  Remove pan from oven.
    Stir in garlic salt, onion salt, lemon juice, and Worcestershire sauce.
  2. Add cereal, nuts, and pretzels, stirring until coated.
  3. Bake for 45 minutes, stirring every 15 minutes.  Spread on paper towels to dry. Store in airtight container.

Yield: 9 cups

If freezing, thaw at room temperature in container in which it was stored.

 

Puppy Chow Mixture: A sweet mix made from cereal, peanut butter and chocolate chips
A KosherEye favorite and so easy to make.

Ingredients:

  • 12-ounce box Crispix or Chex cereal
  • 1/2 cup butter or parve margarine
  •  1 cup peanut butter
  • 12-ounce package chocolate chips
  • 1/4 teaspoon vanilla extract
  • 1 1/2 to 2 cups powdered sugar

Directions:

  1. Place powdered sugar into a large plastic bag and set aside.
  2. Place cereal in large bowl.
  3. Place butter or parve margarine, peanut butter and chocolate chips in
    saucepan and cook, stirring, until chocolate chips are melted and
    mixture is smooth. Remove from heat and stir in vanilla.
  4. Pour mixture over cereal and gently stir until cereal is well coated.
    Pour the coated cereal mixture into the bag containing the powdered
    sugar. Gently shake until cereal is well coated with the powdered sugar.
  5. Pour the mixture onto wax paper to cool and dry.  Store in tightly covered containers at room temperature.
